2 2/3 cups fresh Wilderness Farms Blackberries
Zest from 1 fresh lime
3 Tbs Pectin
1 tsp butter
3 1/3 cup of sugar
2 tsp vanilla
Put blackberries in large sauce pan, add pectin gradually over medium heat stirring constantly. Mix in vanilla. Increase to high heat and bring the mixture to a boil, add sugar while stirring constantly. Bring the mixture to a hard stirring constantly for one minute. Add butter to minimize foaming during the boil. Stir in zest of the lime during this boil. Move the mixture to your jar and place in your canning water bath. Leave in hot water bath for 10 minutes. Remove and set them upright to set for 12 hours.
